Preheat oven to 375°F (190°C).
Heat Dutch oven on stovetop, sear chicken on all sides in olive oil. Remove.
Add onion, carrots, and potatoes. Place chicken on top.
Sprinkle with seasonings and garlic.
Cover with lid and bake 1 hr 30 min.
Remove lid for last 15 min for crispy skin.
Serving Tip: Spoon juices over meat before serving.
