Dutch Oven Whole Chicken with Veggies

Ingredients

  • 1 whole Chicken
  • 2 tbsp Olive Oil
  • 1 Onion quartered
  • 3 Carrots chopped
  • 3 Potatoes halved
  • 3 cloves Garlic
  • 2 tsp Thyme
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions

  • Preheat oven to 375°F (190°C).
  • Heat Dutch oven on stovetop, sear chicken on all sides in olive oil. Remove.
  • Add onion, carrots, and potatoes. Place chicken on top.
  • Sprinkle with seasonings and garlic.
  • Cover with lid and bake 1 hr 30 min.
  • Remove lid for last 15 min for crispy skin.
  • Serving Tip: Spoon juices over meat before serving.
